We are in the midst of a new Cocktail Renaissance, the like of which the world has never seen. There are more great bars and bartenders now than at any time in history (many of them point to London and New York as inspiration). Regardless of location, if you’ve experienced the magic of a mixologist you know it: the mixer is a fresh locally grown fruit or a lovely muddled ginger cucumber base with a splash of champagne or lime squeezed right in front of you or an exotic top shelf liquor. This is a far cry from beer pong and Jaeger bombs, the mixology movement is about a reverence for the ingredients, original recipes, and finding new ways to highlight flavors and cultures through beverages.

We are delighted to welcome back our fabulous Mixologists for the second Celtic Thunder Cruise. All of these professionals carry a huge pedigree in the world of Mixology, having worked as head bartenders and mixologists in top cocktail bars around the world and they are bringing their skills and expertise (not to mention their fun-loving antics) on board the MSC Divina for the Celtic Thunder cruise. They will use their finely-honed craft to create daily cocktail specials – custom designed for the cruise, offer mixology demonstrations, cocktail classes, parties and much more.

The Celtic Thunder Mixologists are Joe Stokoe, Liam Cotter, Andrew Copsey and Elliot Davis.

Joe is an internationally recognized, award-winning bartender who has worked in hospitality since 1998. He has overseen the bars and drinks menus at some of London’s most well-regarded venues including Milk & Honey, Trailer Happiness, All Star Lanes, and The Box. In addition to his impressive London credentials, Joe has traveled around the world extensively and has been fortunate enough to have worked in such places as Sydney, Vancouver, and New York City. As the Appleton Estate Bartender Champion of 2009, Joe also makes a mean daiquiri.
